With Dried White Bean Jam (Mứt Đậu Trắng), you can create one of fantastic Vietnamese Dessert Recipes for your Tết holiday.
Ingredients
White bean (large size)
Sugar
Vanilla starch and salt
Process
- Clean white beans few times, pick off all bad beans. Add a little salt into water; then pour white bean and soak through 1 night (make sure water will reach to the top of bean). Next day, bring to steam in 10 – 15 minutes. Use your hands to press gently, if they are soft, turn off the heat and pour into basket, wait to get dry.
- Add white beans, sugar into pan (100g beans with 60 – 70g white sugar). Or you can adjust to suit your flavor. But, if you do not use enough sugar, it cannot stick around beans.
- Shake gently to make sure sugar and bean mix well. Wait for 2 – 3 hours and then bring to cook with small heat. Because beans are soft, you should not use chopsticks to stir. From my cooking experiences, just hold the pan handle and shake gently.
- Cook with small heat and when beans turn to white, you can use chopsticks or wood spoon to stir gently. Cook until the sugar syrup is ran out and sticks around beans. Cook more 3 – 4 minutes and add more vanilla starch into pan. Stir well and turn off the heat.
