(Mỳ Gà Rán) - Fried Chicken with Egg Noodle Soup comes from many delicious Vietnamese Chicken Recipes.
The best combination between fried chicken and vermicelli will bring a strange and amazing flavor in your mouth. Using with sliced chili is perfect.
- 1kg Chicken Thighs and Wings.
- 2-3 bone chicken (You can buy at Vietnamese Markets)
- White Radish, Salty Radish, Dried Shrimps, Onion (for making broth)
- 500gr Egg Noodle (You can buy at Vietnamese/ ChineseMarkets)
- Vegetables: Bean Sprout, Scallion, Salad, Shallot
- Purple Onion, Salt, Sugar, Pepper, Chili.
- Clean chicken thighs and wings with water added a little salt. Next, use knife to cut some lines on thighs and wings to absorb spices. Marinate with 1 little salt + pepper + sugar, wait about 1 – 2 hours.
- Soak dried shrimps into water about 5 – 10 minutes. Peel off the cover of white radish, clean and slice it into medium pieces.
- Clean bone chicken with water added a little salt. Next, put them with chicken thighs + wings into pot. Add more dried shrimps + sliced white radish + salty radish + 1 teaspoon salt, pour cold water into pot until it covers all meat and other stuffs. Cook until it boils. Sometime, use spoon to scoop out dirty bubble and add more water if it is nearly out. Simmer about 10 – 15 minutes with small heat and turn off the heat. Next, cover the pot about 15 – 20 minutes to make sure meat is cooked.
- Clean carefully all vegetables with water added a little salt. Slice scallion small, cut into short pieces with shallot.
- Peel off the cover of purple onion, slice thinly. Add ½ tablespoon oil on pan, wait to heat, add more sliced purple onion and fry until it is fragrant. Pour this mixture on bowl, it will be sprinkled on face of egg noodle.
After 15 minutes, put all chicken thighs and wings out of broth. Wait to dry. With the bone chiken, continue simmer with small heat, add more water for broth and season again to suit your flavor. Next, pour a little oil on pan, wait to heat, put chicken thighs + wings into pan and fry with large heat. Fry until it color turns yellow. Turn off the heat and put them on plate added paper napkin.
- Put egg noodle into hot water. Wait about 3 – 5 minutes. Pour out all water and wash egg noodle with cold water. Wait to dry.
- Mix egg noodle with mixture.
- When using, add egg nooodle on bowl + chicken meat + vegetable and scoop broth on face of noodle.
Never use Fried Chicken with Egg Noodle Soup when the broth is not hot. Eating with sliced chili is more perfect.
