(Giò Xào Ngũ Sắc) - Fried Pork Meat in 5 colors is one of interesting Vietnamese Cuisine for Tet Holiday.

Fried Pork Meat in 5 Colors is the combination of pork meat, carrot, jelly’s ear mushrooms and salty eggs. It is used with boiled rice and hot soup which can bring a true flavor of Tet from Vietnam to every single person.
Ingredients
- 300gr grinded pork meat (Use the shoulder part of pork)
- 1 pork ear
- 200gr half lean half fat pork meat
- 4 – 6 salty eggs
- 1 carrot
- 3 – 4 Jelly’s ear mushrooms
- 4 eggs
- White wine
- Spices: salt, sugar, fish sauce, pepper, purple onion, spring onion, Maggi’s stuff.
- Banana leaves.
Process
- Clean carefully pork ear with water added a little salt. Next, scrape this ear with white wine + salt. And wash again with water. Then, bring to boil and slice small.

- Clean half lean half fat pork meat, bring to boil with water. Wait to get cold and slice small.

- Soak jelly’s ear mushrooms into water in 5 – 7 minutes. Clean again, cut off the roots and slice small. Peel off the cover of carrot, clean and slice fibre. Peel off the cover of purple onion and slice small.

- Stir well eggs with sliced spring onion + 1 teaspoon salt and a little pepper.

- Heat the oil into pan, fry thinly egg.

- Mix sliced carrot + purple onion + jelly’s ear mushroom + sliced pork ear + half lean half fat pork meat + grinded pork together. Marinate with a little pepper + 2 teaspoons fish sauce + 1 teaspoon salt + ½ teaspoon Maggi’s stuff + 1 teaspoon sugar. Wait about 30 minutes.

- You can try to taste the flavor of mixture by put a little into microwave to heat it. Then, taste again to suit your flavor or not.

- Separate yolks and white parts of salty eggs. Wash carefully the yolks into white wine and bring them to steam in 5 minutes or you can grill at 160 degree in 5 minutes.

- Clean carefully banana leaves. Wait to get dry. Arrange 2 – 3 banana leaves into the cross (each leaf has length about 205 – 30cm).

- Pour fried egg on face of banana leaves.

- Scoop 1 part of mixture on the center of fried egg.

- Arrange 3 yolks from salty eggs in line and use your hand to roll firmly and carefully to make sure fried egg can cover around mixture of pork meat.

- Use nylon rope to knot outside banana leaves (like photo below). Do not tie too firm.

- Fold one side of this roll, put it stand and do the same process with another side. Use another banana leaf to cover two side.

- Use a long nylon rope to knot along the roll firstly and then knot across. Make sure you tie firmly.

- Boil the water first. Then, put this roll into pot and boil (make surea water can cover all face of roll). Boil in 40 – 45 minutes. Turn off the heat, put on basket and wait to get dry.

- Finally, your dish is ready to serve for this Tet Holiday. When seve Fried Pork Meat in 5 Colors , peel off the cover of banana leaves, slice thin and arrange on plate. You can eat with Pickled Chinese Scallion (Củ Kiệu), rice paper, vermicelli and vegetables. It will bring a stunning flavor in your mouth.
