Ingredients
- 200g rice pancake flour (Bột Bánh Cuốn) – Buy at Vietnamese Markets
- 450ml water, ½ teaspoon salt, 2 tablespoons oil.
- 2 slices of fried tofu (150g)
- 1 carrot
- 10g Jelly ear mushrooms
- Vegetarian Magi’s stuff, salt, spring onion, pepper, soya sauce
- Making sauce: soya sauce, sugar, chili, roasted peanut, Cự Đà soya sauce (optional)
- Basil leaves, bean sprout.
Process
- Slice tofu thinly. Peel off the cover of carrot, clean and slice fiber. Soak mushrooms, cut off the roots and slice small. Clean spring onion and slice small as well.
- Heat 2 teaspoons oil, add sliced carrot and spring onion into pan and fry in 5 – 7 minutes.
- Next, add more sliced mushrooms with a little salt into pan.
- Then, continue to add sliced tofu with a little soya sauce, use chopsticks to stir gently, season again to suit your flavor. Fry from 5 – 7 minutes, turn off the heat and sprinkle more pepper on face. Pour into clean bowl. - Clean well basil and bean sprout.
- Mix rice pancake flour with 450ml water, salt and oil together. Stir well. Use nonstick pan to fry these rice pancakes.
